Beets aren’t something most people cook with but if prepared properly, they are absolutely delicious! Try this Outreach Farm Project family beet recipe using our fresh harvested Merlin Beets.

Prep Time: 3 minutes

Cook Time: 40 minutes

Serves: 1 person per beet


  • Beets
  • Olive Oil
  • Salt
  • Pepper


Step 1: Preheat oven to 400 degrees.

Step 2: Gentle scrub/wash/rinse beets to remove any soil.

Step 3: Cut off both ends of the Beet. (The beet greens are edible, nutritious, and delicious.)

Step 4: Drizzle beets with olive oil.

Step 5: Rub on salt and pepper.

Step 6: Wrap beets into a tightly sealed aluminum foil pouch to avoid any leaks.

Step 7: Place in oven to roast for 40 min.

Step 8: Let cool until warm to touch.

Step 9: Rub off skin using a paper towel.

Step 10: Serve warm or chill and slice over a salad.
